01 / ABOUT THE PLACE
At KUNON Baking Factory in Koto Ward's Minamisuna, display counters are lined with freshly baked goods showing off rich, golden-brown crusts. Among the quick picks are freshly baked madeleines, available in a classic premium vanilla alongside more distinct variations like Parmigiano and basil, which brings a pleasant balance of savory salt and herbal aroma. The bakery also turns out freshly baked financiers that highlight simple toasted butter richness, petite mini canelés, and spiced canelés that make effortless additions to an everyday tea break.
What defines the shop is its lineup of baked goods and fresh pastries, skillfully layering spices, herbs, and fruit. Selections include a dense, satisfyingly sweet banana cake, cookies accented with cardamom or chai spices, and a cheesecake pairing apricot with fragrant jasmine, each crafted to showcase the distinctive bouquet of its ingredients. Their cream puffs, pairing a crunchy pastry shell with smooth cream, have also earned a following, making it tempting to pick up an assortment for takeaway to compare textures at home.
Beyond takeaway baked treats, the shop occasionally offers inventive short-course dessert menus centered on parfaits. In a previous course pairing two varieties of strawberries with spices, the progression opened with Taiwanese rose tea, followed by a Tokun strawberry dessert plate and a tasting flight of hon-mirin ranging from unrefined moromi mash to aged vintages. The centerpiece parfait layered Tahitian vanilla milk and mirin lees ice cream with batak pepper streusel and a chewy mousse, complemented by citrus and tonka bean sauces that gradually revealed new nuances throughout the glass. Concluding with a second course of Japanese black tea scented with bergamot, alongside small pastries like tarts and dacquoise, the experience turns dessert into an immersive narrative arc.
